Pancake is a classic breakfast on weekends, but have you tried it smash a banana or grate an apple into the batter? Fruits give it a really good flavour and on the other side you don’t have to use so much flour. In this recipe I also put apple into the batter and on the pancakes too and sprinkled it with ground walnut and a bit of cinnamon sugar, that’s how the layers are built up and we were very satisfied with the result, hope you’ll try it and love it! 🙂

100 g whole wheat flour
2 tablespoon brown sugar
1/2 pack baking powder (7,5g)
1/2 teaspoon ground cinnamon
200 ml plant based milk
2 tablespoon oil
3 medium sized apples
2 teaspoon ground cinnamon
cinnamon sugar to sprinkle the pancakes
cca. 50 g ground walnut
Wash and peel the apples then grate them and add 2 teaspoon ground cinnamon. Measure the flour into a mixer bowl, add the brown sugar, baking powder and mix them well, then add the liquids: the plant based milk and the oil, put the half of the grated apple into the pancake batter and stir in well.
Heat a pancake pan at medium heat and bake the pancakes as usual.
Turn it to the other side and bake it until golden brown.
Let’s make the mini towers: put some grated apple onto a pancake, sprinkle it with ground walnut then sprinkle with a bit of cinnamon sugar,
then top it with another pancake and make the layers as you made it before. I made 3 layers and on the top there were apple, walnut and cinnamon sugar.
