Apple pie with walnut and puffed amaranth

This isn’t a traditional apple pie recipe, but it’s absolutely worth trying it because the apple, cinnamon, walnut and puffed amaranth are in good harmony with the crunchy puff pastry. 🙂

PREPARATION

cca. 25-30 minutes

INGREDIENTS

1 pack puff pastry
5 medium sized apples
100 g walnut
50 g puffed amaranth
200 ml plant based milk
2 tablespoon brown sugar
2-3 teaspoon cinnamon

2 tablespoon brown sugar and
cinnamon to top the pie

DIRECTIONS

Place the puff pastry into a pie pan, blend the walnut and 1 apple with 200 ml plant based milk, 2-3 teaspoon cinnamon and 2 tablespoon brown sugar then mix with the puffed amaranth.

Top the puff pastry with the appple-cinnamon-puffed amaranth mixture, slice the remaining 4 apples into half-moon shapes,

place the apple slices next to each other and continue set them until the whole pie will be filled.

Sprinkle it with brown sugar and cinnamon and bake it in preheated oven at 180C for 20-30 minutes, or until the puff pastry will be golden brown and the apple slices will be well baked.
