Mini banana breads with dried fruits and a hint of orange zest

Christmas is coming soon, maybe you’re also thinking of what to bake, with this recipe you cannot fail, these mini banana breads are so tender and tasteful thanks to the orange zest and there are so many little surprises in the inside of them in form of dried fruits. We’re sure everybody will love them. 🙂

150 g whole wheat flour
50 g ground oatmeal
100 g ground walnut
1 pack baking powder
1 flat teaspoon baking soda
2 ripe bananas
200 ml plant based milk
150 g dried fruits (dried exotic fruit mix, pineapple, mango, papaya, raisin)
6 tablespoon corn oil or coconut oil
1 teaspoon cinnamon
2 oranges’ peel (grated)
4 tablespoon maple syrup

powdered sugar to top them


Blend the oats and walnuts until smooth powder and mix with the whole wheat flour, add the baking powder, baking soda and stir in well. Crush two bananas with a fork, grate two oranges’ peel and cut the dried fruit cubes in smaller pieces. Mix the plant based milk, oil, orange peel, dried fruits and maple syrup well then stir the mixture in the flour.

Fill the cupcake molds with the batter,

and bake them in preheated oven at 180C for cca. 25 minutes. As time goes by check them with a toothpick, if it isn’t sticky and the tops have a little colour they’re ready.

Turn them upside down, press them a little to the table to be their bottom flat and let them cool down.

Sprinkle them with powdered sugar and enjoy them! 🙂
