Red lentil dhal with roasted cauliflower florets

There is a belief in many countries if you eat lentil at New Year’s Eve you won’t have any financial problem during the year, so let’s make a delicious and spicy dahl of red lentils. 🙂

INGREDIENTS

1 large onion
3-4 cloves of garlic
2 pieces peperoncino
2 cm length fresh ginger
250 g tomato puree
250 g dry red lentil (not cooked)
2 tablespoon curry paste
400 ml water
400 ml coconut milk

1 medium cauliflower
2 tablespoon curry paste
2-3 cloves of garlic
2 tablespoon oil
75-100 g tomato puree
1-2 pinch of salt

DIRECTIONS

Mix 2 tablespoon curry paste with 75 g tomato puree, 2 tablespoon oil, 3 grated garlic cloves and 2 pinch of salt. Cut the cauliflower into florets, wash them and cover with the curry paste mixture, then bake them in preheated oven at 180C until tender and have some colour, cca. 20-30 minutes.

Peel and slice a large onion, grate 3-4 cloves of garlic and the fresh ginger and crush 2 peperoncinos. Cook the onion on a small amount of oil until tender and translucent then add the grated garlic, ginger and peperoncino and give them 1-2 minutes.

Add the curry paste and cook them for 1-2 minutes, with continuously stirring.

then add the tomato puree, the washed and strained red lentils and 400 ml water, let it simmer until the lentils will be almost tender.

then stir the coconut milk in and give it a few minutes.

by then the lentils are cooked also the cauliflower florets will be ready.

Serve it with basmati rice, or you can eat it just with the roasted cauliflower. Good appetite! 🙂
