Spinach and smoked tofu pie with puff pastry

Spinach and smoked tofu are always a good combination, this meal is light but delicious for the busy weekdays. 🙂

2 pack of smoked tofu (2x 180g)
200 ml plant based cream (soy, almond or rice cream)
5-6 cloves of garlic
3-4 sprinkle of pepper
1 teaspoon salt or to taste
6 big handful spinach (cca. 300g)
1 pack puff pastry

vegan parmesan
3 tablespoon sesame seeds
2-3 tablespoon nutritional yeast
salt and pepper to taste


Peel and crush the garlic cloves, heat a little amount of vegetable oil in a frying pan and roast the garlic for a minute then add the tofu cubes and cook them until they’ll have a little colour.

During the cooking sprinkle them with pepper…

Then you can add the spinach in small amounts and when they cook down, you can add the reamining part of them.

Add the cream, cook for a few minutes then blend the mixture with food processor.

Place the puff pastry into a baking pan and press down in it well then put the mixture into and bake in preheated oven over 180C for 20-25 minutes or until the pastry’ll have a little colour.

During the pie is baking roast the sesame seeds in dry frying pan until they’ll be golden brown then ground them with a food processor and mix with the nutritional yeast, salt and pepper.

Serve with vegan parmesan, good appetite! 🙂
