Veggie shashlik with smoked tofu and polenta

Here the weather is already cold to grill in the garden, but it doesn’t mean that we have to skip a delicious grilled veggie shashlik from our menu. 🙂

PREPARATION

cca. 10-15 minutes (and let the veggies marinated for 20-30 minutes)

COOKING

cca. 25-30 minutes

INGREDIENTS

1 medium zucchini
1 medium eggplant
14 pieces small champignon mushroom
1 large red onion
200 g smoked tofu
250 g ready-made polenta (you can buy it in a block or a tube and you just have to slice and grill it or just reheat it.)
3 tablespoon oil
4 tablespoon tamari sauce
2 cloves of garlic (grated)

optional dip
200 g natur soy yogurt (unsweetened)
2 flat teaspoon curry paste

4-5 bamboo skewers

DIRECTIONS

Wash and cut the veggies in same sized pieces, slice the smoked tofu and the polenta and marinate them in tamari sauce with grated garlic for 20-30 minutes.

Stick the veggies on bambo skewers and bake them in preheated oven at 180C for 25-30 minutes or until they’re baked well.

You can eat it by itself or serve with soy yogurt with a hint of curry paste, good appetite!
